I really don’t do much with apples. I eat them. And when someone else makes it I eat apple pie (mmm, pie). I know Granny Smith and Red Delicious. That is the extents of my apple know how. In Martha Stewart magazine there's an interesting story about pomologist John Bunker from Super Chilly Farm in Palermo where they have more than 200 heirloom varieties.
 Super Chilly Farm is all about the apples of New England and some of the types of apples are 200 years old. Not only is that just freakin' cool, it is the history of apples and the history of New England in fruit form.
