According to the KJ, Rockland-based chocolate maker Bixby & Company will be opening a chocolate cafe and shop in downtown Waterville early next year.

The cafe will be located in the Hains Building at 173 Main Street.  The building, owned by Colby College, was once home to Waterville Savings Bank.

In addition to the retail space, the business will also have a seating area for customers to enjoy chocolate beverages, pastries, gelato, and candies.

Founded by Kate McAleer in 2011, Bixby & Co is the only "bean to bar" chocolatier in Maine and has been certified organic by the Maine Organic Farmers and Gardeners Association.  As their are no cocoa beans grown in Maine, McAleer's beans are imported from Belize, the Dominican Republic, Guatemala and Haiti.

You'll be able to satisfy your sweet tooth at Bixby's Waterville establishment starting this Spring.
