A Maine woman, Diana Santospago has taken lobster rolls and other seafood delectables to Phoenix, Arizona and sells the goodies out of a food truck as 'The Maine Lobster Lady'.
A few years ago, Santospago, while running a restaurant in Maine and visiting Arizona, noticed seafood was tough to find in the sand, and there the idea was born.
Santospago, spends winters in the desert and summers in Maine.
